    Prepare the Vegetables

    Peel the carrots and cut them into 1-inch pieces. Dice the onion and chop the celery stalks into small pieces.

    Pat the beef chuck roast dry with paper towels. Season all sides with salt and black pepper.

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Once hot, add the beef chuck roast and sear for about 4-5 minutes on each side until browned. Remove the roast from the pot and set aside.

    In the same pot, add the diced onion, chopped celery, and carrot pieces. Cook for about 5-7 minutes until the vegetables are soft and fragrant.

    Pour in the red wine, scraping the bottom of the pot to deglaze. Add the beef broth, thyme, rosemary, and bay leaves. Stir to combine.

    Place the seared beef back into the pot, ensuring it is submerged in the liquid. Bring to a simmer.
