Main Dish - Savory Vegetable Frittata

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Sauté the Vegetables

    In a large oven-safe skillet, heat olive oil over medium heat. Add diced onion and bell peppers, sauté until softened (about 5 minutes). Stir in the chopped spinach and cook until wilted.

    Prepare Egg Mixture

    In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

    Combine and Cook

    Pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle feta cheese on top. Cook on the stovetop for 3-4 minutes until the edges start to set.

    Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the frittata is puffed and golden.
