Main Dish - Savory Vegetable Frittata
- 1
Preheat the Oven
Preheat your oven to 375°F (190°C).
- 2
Sauté the Vegetables
In a large oven-safe skillet, heat olive oil over medium heat. Add diced onion and bell peppers, sauté until softened (about 5 minutes). Stir in the chopped spinach and cook until wilted.
- 3
Prepare Egg Mixture
In a mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.
- 4
Combine and Cook
Pour the egg mixture over the sautéed vegetables in the skillet. Sprinkle feta cheese on top. Cook on the stovetop for 3-4 minutes until the edges start to set.
- 5
Bake
Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the frittata is puffed and golden.
- 6
Cool and Serve
Allow the frittata to cool for a few minutes before slicing and serving.
Side Dish - Sweet Potato Hash
- 7
Prepare Sweet Potatoes
Peel and dice the sweet potatoes into small cubes.
- 8
Cook the Hash
In a large skillet, heat olive oil over medium-high heat. Add the diced sweet potatoes, red onion, garlic, paprika, salt, and black pepper. Stir to combine.
- 9
Sauté
Cook for about 15-20 minutes, stirring occasionally until the sweet potatoes are tender and slightly crispy.
- 10
Finish with Herbs
Stir in the chopped fresh parsley just before serving.

Juice the Oranges
Cut the oranges in half and juice them using a citrus juicer or reamer until you have approximately 4 cups of juice.
- 12

If desired, stir in sugar to taste.
- 13
