Preparation of Charred Corn Salsa

    Prepare the Charred Corn Salsa

    In a skillet over medium-high heat, add corn kernels and cook until they are charred, about 5 minutes. Remove from heat and combine with diced red onion, cilantro, lime juice, and salt in a bowl. Set aside.

Preparation of Roasted Poblano Salsa

    Roast the Poblano Peppers

    Preheat the oven to 475°F (245°C). Place poblano peppers on a baking sheet and roast for 20-25 minutes or until the skin is blistered and blackened. Remove from the oven and let cool. Peel the skin off, remove seeds, and chop.

    Make the Roasted Poblano Salsa

    In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add chopped roasted poblano, salt, and pepper, cooking for an additional 5 minutes. Set aside.

    In a small bowl, combine sour cream and lime juice. Mix well and set aside.

    In a large skillet, heat olive oil over medium-high heat. Add frozen hash browns and cook until golden brown and crispy, about 8-10 minutes. Stir in shredded smoked Gouda cheese, salt, and pepper, cooking until the cheese melts. Remove from heat.

Assembly of Breakfast Burrito

    Lay a flour tortilla on a flat surface. Spoon a portion of the scrambled eggs, rotisserie chicken or sausage, charred corn salsa, roasted poblano salsa, smoked gouda hash browns, diced tomatoes, and crumbled queso fresco onto the tortilla. Drizzle with lime sour cream.

    Fold in the sides of the tortilla and roll it tightly from the bottom to the top, enclosing all the fillings. Repeat with remaining tortillas.
