Taco Filling

    Prepare the Chicken

    In a bowl, mix olive oil, chili powder, cumin, garlic powder, salt, and black pepper. Add the chicken breast and coat evenly. Let it marinate for at least 30 minutes.

    Cook the Chicken

    Heat a grill or skillet over medium heat. Cook the marinated chicken for 6-7 minutes on each side or until fully cooked. Let it rest for a few minutes before slicing it into strips.

    Warm the Tortillas

    In a dry skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Crunchy Slaw

    Combine Ingredients

    In a large bowl, combine shredded green cabbage, shredded carrot, thinly sliced red onion, and chopped cilantro.

    Dress the Slaw

    Drizzle lime juice over the slaw mixture and sprinkle with salt. Toss well to combine and refrigerate for 15 minutes before serving.

Poblano Salsa

    In a medium bowl, combine roasted and diced poblano peppers, diced tomato, finely chopped red onion, chopped cilantro, and lime juice.

Dirty Rice
