Fry the Chips
Heat vegetable oil in a deep pan over medium heat. Once hot, carefully add potato slices in batches, frying until golden brown and crispy, about 3-4 minutes per batch.

Remove chips from the oil and place them on a paper towel-lined plate. Sprinkle immediately with salt and allow to cool.
Tortilla Chips

Cut the Tortillas
Stack the corn tortillas and cut them into triangles.

Heat vegetable oil in a separate deep pan over medium heat. Add the tortilla triangles in batches, frying until crispy and lightly browned, about 2-3 minutes.

Remove tortilla chips and place on a paper towel-lined plate. Sprinkle with salt and allow to cool.
Chipotle Ranch Dip

In a mixing bowl, combine ranch dressing, chopped chipotle peppers, lime juice, and chopped cilantro. Stir until well blended.

Cover and refrigerate the dip for at least 30 minutes to allow flavors to meld.

In a bowl, mix together sour cream, mayonnaise, finely chopped onion, garlic powder, and salt until smooth.

Poblano Salsa

In a mixing bowl, combine roasted and chopped poblano peppers, diced tomatoes, diced red onion, lime juice, chopped cilantro, and salt. Mix well.
