In a large mixing bowl, whisk together the flour, salt, oregano, and basil.

Once the yeast is activated, stir in the olive oil and the yeast mixture into the dry ingredients. Mix until a shaggy dough forms.

Turn the dough out onto a floured surface and knead for about 8-10 minutes until smooth and elastic.

Gently fold in the chopped olives until evenly distributed throughout the dough.

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for 1-1.5 hours or until doubled in size.

Punch down the risen dough and turn it out onto a floured surface. Shape it into a loaf or divide into smaller rolls.

Place the shaped dough on a baking sheet lined with parchment paper. Cover and let it rise for another 30-45 minutes.
