Cook the Sausage

In a large skillet over medium heat, add the pork sausage and cook until browned and fully cooked, about 5-7 minutes. Break it apart with a spatula as it cooks.

Prepare the Peppers

While the sausage is cooking, chop the poblano peppers into small pieces. Once the sausage is cooked, add the chopped peppers to the skillet and cook for an additional 3-4 minutes until softened.

Mix the Egg Mixture

In a large mixing bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

Combine Ingredients

Add the cooked sausage and poblanos to the egg mixture. Stir in the shredded cheddar cheese and chopped green onions until evenly distributed.

Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish with olive oil.
