Beef Tartare Preparation

    Prepare the Beef

    Finely chop the beef tenderloin and place it in a mixing bowl.

    Combine Ingredients

    Add the egg yolk, capers, shallot, Dijon mustard, Worcestershire sauce, olive oil, salt, and black pepper to the chopped beef. Mix gently until combined.

    Finish with Chives

    Fold in the chopped chives and adjust seasoning to taste. Set aside in the refrigerator until ready to serve.

    Prepare the Potatoes

    Peel and cut the Russet potatoes into thin strips.

    Soak the Potatoes

    Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    Dry and Fry

    Drain and dry the potato strips thoroughly. Heat the vegetable oil in a deep fryer or large pot to 180°C (350°F). Fry the potatoes in batches until golden and crispy, about 4-5 minutes.

    Drain and Season

    Remove the fries with a slotted spoon and drain on paper towels. Season with sea salt while still hot.
