Preparation and Grilling

Marinate the Shrimp
In a large bowl, combine the jumbo shrimp, chopped cilantro, lime juice, minced garlic, tobanjan, olive oil, salt, and black pepper. Mix well until the shrimp are evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Prepare the Grill
Soak the mesquite wood chips in water for about 30 minutes to an hour. This will help create smoke while grilling. Preheat your grill to medium-high heat.

Grill the Shrimp
Once the grill is hot, place the soaked mesquite wood chips directly on the grill grates or in a smoker box. Remove the shrimp from the marinade, shaking off excess liquid. Thread the shrimp onto skewers or place them directly on the grill. Grill for about 2-3 minutes on each side, or until they turn pink and opaque.

Serve
Once grilled, remove the shrimp from the grill and place them on a serving platter. Garnish with additional chopped cilantro and lime wedges. Serve immediately.
