    Preparing the Beef

    Begin by seasoning the beef short ribs with salt and black pepper on all sides.

    Searing the Ribs

    In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Once hot, add the seasoned short ribs and sear them for about 4-5 minutes on each side, until browned. Remove the ribs and set aside.

    Sautéing the Vegetables

    In the same pot, add the chopped onion, minced garlic, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened and the onion is translucent.

    Adding Flavor

    Stir in the tomato paste and cook for another 2 minutes, then pour in the red wine. Scrape the bottom of the pot to release any browned bits. Let the wine simmer for about 5 minutes.

    Combining Ingredients

    Return the seared short ribs to the pot. Add the beef broth, bay leaves, dried thyme, and cayenne pepper. Bring the mixture to a boil.

    Braising the Ribs

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 3 hours. The beef should be tender and falling off the bone.

    Finishing Touches

    Remove the bay leaves before serving. Serve the short ribs hot with the braising liquid spooned over the top.
