Preparation

    Marinating the Steak

    Start by marinating the ribeye steaks. In a small bowl, mix olive oil, kosher salt, black pepper, and garlic powder.

    Applying the Marinade

    Rub the marinade all over the ribeye steaks, ensuring they are evenly coated. Let the steaks sit at room temperature for about 30 minutes.

Grilling

    Preparing the Grill

    Soak the mesquite wood chips in water for at least 30 minutes. Preheat your grill to high heat.

    Adding Wood Chips

    Place the soaked mesquite wood chips in a smoker box or wrap them in aluminum foil with holes poked in it, then place on the grill.

    Grilling the Steak

    Once the grill is ready and the smoke starts to rise, place the ribeye steaks directly over the heat. Grill for about 4-5 minutes on one side.

    Flipping the Steak

    Flip the steaks and continue grilling for another 4-5 minutes for medium-rare, or until they reach an internal temperature of 130-135°F (54-57°C).

    Remove the steaks from the grill and let them rest for 5-10 minutes. This allows the juices to redistribute.
