Prime Rib Preparation

    Prepare the Prime Rib

    Preheat your oven to 450°F (230°C). Rub the prime rib roast with olive oil, then season generously with salt, black pepper, and garlic powder. Place the roast bone-side down in a roasting pan.

    Roast the Prime Rib

    Roast for 20 minutes at 450°F (230°C), then reduce the temperature to 325°F (165°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare. Remove from the oven and let it rest for at least 20 minutes before slicing.

Beef Au Jus Preparation

    Make the Au Jus

    In a large saucepan, combine beef broth, red wine, sliced onion, minced garlic, thyme, bay leaves, and black peppercorns. Bring to a boil, then reduce heat and simmer for about 30 minutes, allowing the flavors to meld.

    Strain the Au Jus

    After simmering, strain the au jus through a fine mesh strainer, discarding the solids. Keep the au jus warm until ready to serve.

Sandwich Assembly

    Prepare the Baguette

    Slice the noble baguette in half lengthwise. Spread mayonnaise on both halves.

    Assemble the Sandwich

    Thinly slice the rested prime rib and layer it generously on the baguette. Top with the other half of the baguette.

    Serve with Au Jus

    Serve the sandwiches warm with a small bowl of beef au jus on the side for dipping.
