Prepare the Spice Rub
In a small bowl, combine paprika, cumin, garlic powder, onion powder, oregano, salt, and black pepper. Mix well until all spices are evenly blended.

Prepare the Chicken
Rinse the organic whole chicken under cold water and pat dry with paper towels. This helps to ensure the skin gets crispy during roasting.

Season the Chicken
In a separate bowl, mix together olive oil and lemon juice. Rub this mixture all over the chicken, ensuring to coat both the inside cavity and the outside skin. Then, take the prepared spice rub and generously apply it all over the chicken, making sure to get it under the skin where possible.

Roast the Chicken
Preheat your oven to 300°F (150°C). Place the seasoned chicken in a roasting pan or on a wire rack in a baking dish. Roast the chicken in the preheated oven for about 2 to 2.5 hours, or until the internal temperature reaches 165°F (75°C).

Rest and Serve
Once the chicken is done, remove it from the oven and let it rest for at least 15 minutes before carving. This allows the juices to redistribute throughout the meat, making it more tender and flavorful. Serve with your favorite sides.
