    Prepare the Pork

    Trim any excess fat from the heritage pork shoulder and cut it into 1-inch cubes.

    Sear the Pork

    In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the pork cubes in batches, searing until browned on all sides. Remove the pork and set aside.

    Sauté the Vegetables

    In the same pot, add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.

    Add Seasonings and Stock

    Stir in the cumin, oregano, salt, and black pepper. Then add the roasted green chiles and chicken broth, scraping the bottom of the pot to deglaze.

    Combine Ingredients

    Return the seared pork to the pot, stirring to combine everything well.

    Simmer the Stew

    Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the pork is tender.

    Finish and Serve

    Once the pork is tender, remove from heat and stir in the shredded jack cheese. Allow it to melt before serving. Taste and adjust seasoning if necessary.
