    Prepare the Chiles

    Roast the fresh green chiles over an open flame or under a broiler until the skins are blackened and blistered. Place them in a bowl and cover with plastic wrap for about 10 minutes to steam. Once cooled, peel off the skins, remove the seeds, and chop them finely.

    Prepare the Patties

    In a mixing bowl, combine the ground beef, chopped roasted green chiles, salt, and black pepper. Mix gently with your hands until just combined, being careful not to overwork the meat.

    Form the Patties

    Divide the beef mixture into two equal portions and shape them into burger patties, about 3/4 inch thick.

    Cook the Patties

    Heat olive oil in a skillet or grill over medium-high heat. Cook the patties for about 4-5 minutes on each side or until they reach your desired level of doneness. About a minute before they are done, place a slice of Tillamook cheddar cheese on each patty to melt.

    Toast the Buns

    While the patties are cooking, lightly toast the burger buns on the grill or in a toaster until golden brown.

    Assemble the Burger

    Place a lettuce leaf on the bottom half of each toasted bun, followed by the cooked patty with melted cheese. Top with a slice of tomato and onion, then close with the top half of the bun.
