    Boil the Eggs

    Place the large eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat.

    Simmer

    Once the water reaches a rolling boil, cover the saucepan with a lid and remove it from heat. Let the eggs sit in the hot water for 12-14 minutes.

    Cool the Eggs

    After the time has elapsed, carefully drain the hot water and transfer the eggs to a bowl of ice water. Allow them to cool for at least 5 minutes.

    Peel the Eggs

    Once cooled, gently tap the eggs on a hard surface and peel off the shells. Rinse the eggs under cold water to remove any shell fragments.

    Prepare the Filling

    Slice the peeled eggs in half lengthwise. Remove the yolks and place them in a mixing bowl. Add the mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the yolks.

    Mix the Filling

    Using a fork, mash the yolk mixture until smooth and well combined. If desired, fold in the optional bacon bits for added flavor.

    Fill the Egg Whites

    Spoon or pipe the yolk mixture back into the hollowed-out egg whites. Be generous and mound the filling slightly for an appealing presentation.

    Garnish

    Sprinkle paprika over the filled eggs for color and flavor. If using, add chives on top for garnish.

    Arrange the deviled eggs on a platter, serve chilled, and enjoy!
