Prepare the Tartar Sauce
In a small bowl, combine the mayonnaise, finely chopped dill pickles, chopped capers, and lemon juice. Mix well until all ingredients are combined. Set aside in the refrigerator to chill while you prepare the fish.

Season the Branzino
Pat the branzino filets dry with paper towels. Season both sides with salt and black pepper.

Pan-Sear the Branzino
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned branzino filets to the skillet. Cook for about 3-4 minutes on each side, or until the fish is golden brown and cooked through. Remove from the skillet and let rest for a minute.

Toast the Brioche Buns
In the same skillet, reduce the heat to medium and add the brioche buns, cut side down. Toast for about 2 minutes or until golden brown.

Assemble the Sandwich
Spread a generous amount of tartar sauce on the bottom half of each toasted brioche bun. Place a lettuce leaf on each bun, followed by a piece of the pan-seared branzino, a slice of tomato, and a final dollop of tartar sauce. Top with the other half of the brioche bun.

Serve the branzino sandwiches immediately with your choice of sides.
