Prepare the Filling

    Cook the Potatoes

    Peel and dice the potatoes into small cubes. Boil in salted water for about 10-15 minutes or until tender. Drain and set aside.

    In a skillet over medium heat, add the chorizo. Cook for about 5-7 minutes, breaking it apart with a spatula until fully cooked and browned. Drain excess fat if necessary.

    In the same skillet with the chorizo, add the cooked potatoes. Stir to combine and cook for an additional 2-3 minutes until heated through. Season with salt to taste.

Prepare the Taco Shells
