Marinating the Steak

    Prepare the Marinade

    In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper.

    Marinate the Steak

    Place the flank steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it's well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or overnight for best flavor.

Making Ranchero Sauce

    Sauté the Vegetables

    In a saucepan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

    Add Tomatoes and Chipotle

    Stir in the diced tomatoes and chopped chipotle peppers. Let the mixture simmer for about 10-15 minutes until the tomatoes break down and the sauce thickens slightly.

    Stir in the chopped cilantro and salt. Remove from heat and set aside.

Cooking the Steak and Serving
