Method

Preparing the Steak

  1. 1

    Season the Steak

In a bowl, mix olive oil, garlic powder, cumin, salt, and black pepper. Rub this mixture all over the flank steak.

  2. 2

    Cook the Steak

Heat a grill or skillet over medium-high heat. Cook the seasoned flank steak for about 5-7 minutes on each side, or until it reaches your desired doneness.

  3. 3

    Slice the Steak

Remove the steak from the heat and let it rest for 5 minutes. Then slice it thinly against the grain.

Preparing the Toppings

  1. 4

    Cook the Eggs

In a non-stick skillet, cook the eggs to your liking (fried, scrambled, or poached). Set aside.

  2. 5

    Sauté the Vegetables

In the same skillet, add chopped onion, diced tomatoes, and sliced jalapeños. Sauté over medium heat until the onions become translucent and the tomatoes are softened, about 5 minutes.

  3. 6

    Prepare the Tortillas

In a separate skillet, lightly toast the corn tortillas until they are crispy on both sides.

  4. 7

    Assemble the Dish

On each tortilla, layer sliced steak, cooked eggs, sautéed vegetables, and top with crumbled queso fresco and sliced avocado.
