Method

Pancake Preparation

  1. 1

    Mix Dry Ingredients

In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

  2. 2

    Combine Wet Ingredients

In a separate bowl, beat the eggs and then mix in the milk, melted butter, and vanilla extract until thoroughly combined.

  3. 3

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are okay.

  4. 4

    Preheat Pan

Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.

  5. 5

    Cook Pancakes

Pour 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface, about 2-3 minutes. Flip and cook until golden brown on the other side, about 2 more minutes.

  6. 6

    Repeat

Repeat with remaining batter, adjusting heat as necessary, and keep cooked pancakes warm in a low oven.

Serving

  1. 7

    Plate and Serve

Stack pancakes on a plate, add mixed berries and a generous dollop of whipped cream on top. Serve warm.
