For the Mole Sauce

Prepare the Mole Sauce

    Soak the Chiles

    Remove stems and seeds from the dried chiles. Soak the Ancho, Pasilla, and Guajillo chiles in hot water for about 20 minutes or until soft. Drain and set aside.

    Roast the Tomatoes and Garlic

    In a skillet over medium heat, roast the tomatoes until charred on the outside, about 10 minutes. Add the garlic cloves and roast for an additional 2-3 minutes until fragrant. Remove from heat.

    Sauté Onion

    In the same skillet, add a bit of oil if necessary, and sauté the chopped onion until translucent, about 5 minutes.

    Blend the Mole Ingredients

    In a blender, combine the soaked chiles, roasted tomatoes, garlic, sautéed onion, chicken broth, cinnamon stick, cumin, oregano, dark chocolate, salt, and pepper. Blend until smooth.

    Thicken the Sauce

    Pour the blended mole sauce into a saucepan and simmer over low heat for about 15-20 minutes, stirring occasionally until thickened.

Prepare the Chicken

    Season the Chicken

    Pat the chicken thighs dry and season both sides with salt and pepper.

    Cook the Chicken

    In a large skillet, heat olive oil over medium-high heat. Add the chicken thighs skin side down, cooking for about 6-7 minutes on each side until golden brown and cooked through.

    Combine with Mole

    Once cooked, pour the mole sauce over the chicken thighs in the skillet. Simmer together for an additional 10 minutes to meld the flavors.
