    Cook the Linguica

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the linguica sausage and cook until browned and heated through, about 5-7 minutes. Remove from the pan and set aside.

    Prepare the Plantains

    Peel the plantain and slice it diagonally into 1-inch pieces. In the same skillet, add a little more olive oil if needed, and fry the plantain slices until golden brown and tender, approximately 3-4 minutes on each side. Remove and drain on paper towels.

    In the same skillet, crack the two eggs and season with salt and black pepper. Cook to your desired doneness (sunny side up or over easy), about 3-5 minutes.

    On a plate, layer the refried beans, followed by the cooked linguica, fried plantains, and finally top with the cooked eggs. Crumble the queso fresco on top before serving.
