    Peeling and Grating Potatoes

    Begin by peeling the Russet potatoes. Use a box grater or food processor to grate the potatoes into thin shreds. Place the grated potatoes in a bowl of cold water to prevent browning.

    Chop the onion finely. Set aside in a separate bowl.

    Draining Potatoes

    After letting the potatoes soak for about 10 minutes, drain them in a colander and press out as much excess water as possible. You want the potatoes to be as dry as possible for crispy hash browns.

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering, about 2-3 minutes.
