Prepare the Steak
Season the steak with fajita seasoning. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Cook the steak for about 5-7 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let rest.

Sauté the Vegetables
In the same skillet, add the remaining tablespoon of olive oil. Add sliced onions and bell peppers. Sauté for about 5-6 minutes until they are soft and slightly caramelized. Season with salt and pepper to taste.

Poach the Eggs
Bring 4 cups of water to a gentle simmer in a saucepan. Add the vinegar. Crack each egg into a small bowl, then gently slide into the simmering water. Poach for about 3-4 minutes until the whites are set but yolks remain runny. Remove with a slotted spoon and place on a paper towel to drain.

Make the Hollandaise Sauce
In a heatproof bowl, whisk together egg yolks and lemon juice. Place the bowl over a pot of simmering water, ensuring the bowl does not touch the water. Whisk until the mixture thickens slightly. Gradually whisk in melted butter until the sauce is smooth and creamy. Season with salt and a pinch of cayenne pepper.
