Dough Preparation

    Mix the Dough Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Add the unsalted butter and mix until the mixture resembles coarse crumbs.

    Gradually add the warm water and the egg, mixing until a dough forms. Knead the dough on a floured surface for about 5 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Filling Preparation

    Prepare the Cactus

    Using a knife, carefully remove the spines from the cactus paddles. Rinse the paddles under cold water and chop them into small pieces.

    Sauté the Filling

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Combine All Filling Ingredients

    Add the chopped cactus paddles, cherry tomatoes, cilantro, lime juice, salt, and black pepper to the skillet. Cook for about 10-15 minutes, stirring occasionally, until the cactus is tender. Remove from heat and let cool.

    After the dough has rested, divide it into 8 equal pieces. Roll each piece into a circle about 6 inches in diameter.
