Method

Fried Chicken

  1. 1

    Marinate Chicken

In a bowl, combine the buttermilk, salt, black pepper, garlic powder, and paprika. Add the chicken thighs and marinate for at least 1 hour or overnight in the refrigerator.

  2. 2

    Prepare for Frying

In a shallow dish, place the flour mixed with a pinch of salt and pepper. Heat the vegetable oil in a large skillet over medium-high heat.

  3. 3

    Fry Chicken

Remove the chicken from the marinade, allowing excess to drip off. Dredge in flour until well-coated. Carefully place the chicken in the hot oil and fry until golden brown and cooked through, about 5-7 minutes per side. Transfer to a paper towel-lined plate to drain.

Scrambled Eggs

  1. 4

    Whisk Eggs

In a bowl, whisk together the eggs, milk, salt, and black pepper until well combined.

  2. 5

    Cook Eggs

In a non-stick skillet, melt the butter over medium heat. Pour in the egg mixture and gently stir with a spatula until soft curds form and the eggs are just set, about 3-4 minutes. Remove from heat.

Bacon

  1. 6

    Cook Bacon

In a skillet over medium heat, cook the bacon strips until crispy, about 5-7 minutes. Drain on paper towels.

Biscuits

  1. 7

    Prepare Biscuit Dough

Preheat the oven to 450°F (230°C). In a bowl, mix flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined.

  2. 8

    Shape Biscuits

Turn the dough onto a floured surface and knead gently. Roll out to about 1-inch thickness and cut into rounds.

  3. 9

    Bake Biscuits

Place the biscuits on a baking sheet and bake for 10-12 minutes until golden brown.

Assembly

  1. 10

    Assemble Countryside Benedict

Slice the biscuits in half and layer with fried chicken, scrambled eggs, and bacon. Top with shredded cheddar cheese and drizzle with hollandaise sauce or country gravy. Serve immediately.
