Churro Dough Preparation

Prepare the Dough
In a medium saucepan, combine 1 cup of water, 1 tablespoon of unsalted butter, 1 tablespoon of sugar, and 1 teaspoon of salt. Bring to a boil over medium heat.

Once boiling, remove from heat and stir in 1 cup of all-purpose flour until the mixture forms a ball. Allow to cool for a few minutes.

Add 2 large eggs to the dough, one at a time, mixing well after each addition until the dough is smooth and glossy.

Make the Cheese Filling
In a mixing bowl, beat together 8 oz of cream cheese, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy. Set aside.
Frying and Coating Churros

Heat the Oil
In a large pot or deep fryer, heat 4 cups of vegetable oil to 375°F (190°C).

Pipe the Churros
Transfer the churro dough to a piping bag fitted with a large star tip. Carefully pipe 4-6 inch strips of dough into the hot oil, cutting them with scissors.

Fry the churros for about 2-3 minutes on each side or until golden brown.

Coat the Churros
Remove the churros from the oil and drain on paper towels. In a bowl, mix 1 cup of granulated sugar with 2 tablespoons of ground cinnamon. Roll the hot churros in the cinnamon-sugar mixture until fully coated.

Using a piping bag, fill each churro with the prepared cheese filling by inserting the tip into one end and gently squeezing.
