Crepe Batter Preparation

Make the crepe batter
In a mixing bowl, whisk together the flour and salt. In another bowl, beat the eggs and then mix in the milk. Combine the wet and dry ingredients until smooth. Stir in melted butter and let the batter rest for at least 30 minutes.
Cooking the Crepes

Cook the crepes
Heat a non-stick skillet over medium heat. Pour about 1/4 cup of batter into the skillet and swirl to cover the bottom. Cook for 1-2 minutes until the edges lift, then flip and cook for another minute until golden. Repeat with remaining batter.

Prepare the filling
In a skillet, heat a small amount of oil over medium heat. Add the onions and garlic, sautéing until translucent. Add the mushrooms and cook until softened. Stir in spinach until wilted. Remove from heat and stir in diced tomatoes and beaten eggs. Cook until eggs are set, then mix in mozzarella cheese until melted.

Make the chipotle cream sauce
In a small bowl, combine sour cream, minced chipotle peppers, lime juice, and salt. Mix well until smooth and set aside.

Assemble the crepes
Place a crepe on a plate, spoon the filling mixture in the center, and fold the crepe over. Drizzle with chipotle cream sauce.
