Method

Preparation of Chipotle Aioli

    Make the Chipotle Aioli

    In a medium bowl, combine the mayonnaise, chipotle peppers, lime juice, and minced garlic. Mix well until smooth.

    Season the Aioli

    Add salt and black pepper to the aioli mixture to taste. Adjust the seasoning based on your preference.

Steak Preparation

    Prepare the Steak

    Season the aged Angus steak with salt and black pepper on both sides.

    Cook the Steak

    Preheat a grill or skillet over medium-high heat. Cook the steak for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

    Add Swiss Cheese

    In the last 2 minutes of cooking, place the Swiss cheese slices on top of the steak. Cover to allow the cheese to melt.

    Rest the Steak

    Remove the steak from heat and let it rest for about 5 minutes before slicing.

Assembly

    Prepare the Bread

    Slice the ciabatta loaves in half horizontally and lightly toast them if desired.

    Prepare the Avocado

    Slice the avocado in half, remove the pit, and scoop out the flesh. Slice it into thin pieces.

    Assemble the Sandwich

    On the bottom half of the toasted ciabatta, spread a generous amount of chipotle aioli. Layer the sliced steak on top, followed by the melted Swiss cheese and avocado slices. Top with the other half of the ciabatta.

    Cut the sandwich in half and serve immediately with your favorite side.
