Preparation Steps

  1. 1

    Combine Ingredients

In a large, heavy-bottomed saucepan, combine the goat's milk, sugar, and the cinnamon stick. Stir well to mix the ingredients.

  2. 2

    Heat Mixture

Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring frequently to prevent the milk from scorching.

  3. 3

    Add Baking Soda

Once boiling, carefully add the baking soda to the mixture. The mixture will bubble up, so be cautious. Continue stirring to incorporate the baking soda.

  4. 4

    Simmer

Reduce the heat to low and let the mixture simmer, stirring occasionally. Cook for about 1.5 to 2 hours, or until the mixture thickens and turns a caramel color.

  5. 5

    Add Vanilla

Once the cajeta has thickened, remove it from the heat and stir in the vanilla extract. If using, melt the dark chocolate and mix it in at this point for a chocolate-flavored cajeta.

  6. 6

    Cool and Store

Let the cajeta cool to room temperature before transferring it to clean jars. Seal the jars and store them in the refrigerator. The cajeta will thicken further as it cools.
