Burrito Filling Preparation

    Cook the Chorizo

    In a skillet over medium heat, add the chorizo. Cook for about 5-7 minutes until browned and fully cooked, breaking it apart with a spatula.

    Sauté the Vegetables

    Add chopped onion and diced red bell pepper to the skillet with the chorizo. Sauté for an additional 3-4 minutes until the vegetables are tender.

    Scramble the Eggs

    In a bowl, whisk the eggs until well beaten. Pour the eggs into the skillet and stir gently to combine with the chorizo and vegetables. Cook for 3-5 minutes until the eggs are scrambled and cooked through.

    Add the Beans

    Stir in the canned black beans and cook until heated through, about 2 minutes. Remove from heat and set aside.

    Prepare the Tortillas

    Warm the flour tortillas in a dry skillet or microwave until pliable.

    Assemble the Burritos

    On each tortilla, place a generous portion of the chorizo and egg mixture. Top with sliced avocado and sprinkle with jack and cheddar cheese.

    Wrap the Burritos

    Fold in the sides of the tortilla and then roll it from the bottom up to form a tight burrito.

Serving

    Serve with Sauce

    Place the burritos on a plate and drizzle generously with red diablo or green verde sauce. Enjoy warm!
