Crepe Preparation

    Make the Crepe Batter

    In a mixing bowl, whisk together the flour, milk, eggs, vanilla extract, and salt until smooth. Gradually add the melted butter and mix until fully incorporated. Let the batter rest for at least 30 minutes.

    Cook the Crepes

    Heat a non-stick skillet over medium heat and lightly grease it. Pour 1/4 cup of the batter into the skillet, swirling it to coat the bottom evenly. Cook for about 1-2 minutes until the edges start to lift and the bottom is lightly golden. Flip and cook for another minute. Transfer to a plate and repeat with the remaining batter.

    Prepare the Cream Cheese Mixture

    In a mixing bowl, beat the softened cream cheese until smooth. Gradually add the heavy cream, powdered sugar, and vanilla extract. Beat until the mixture is fluffy and holds soft peaks.

Mixed Berries Preparation

    Prepare the Berries

    In a medium bowl, combine the sliced strawberries, blueberries, and raspberries. Add sugar and lemon juice, gently tossing to coat the berries evenly. Let sit for about 10 minutes to allow the flavors to meld.

Assembly

    Assemble the Berry Crepes

    Take a crepe and spread a generous amount of the whipped cream cheese mixture in the center. Top with a spoonful of the mixed berries. Fold the crepe over to enclose the filling. Repeat with remaining crepes. Serve immediately.
