In a mixing bowl, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.

Heat a skillet or griddle over medium heat and melt 1 tablespoon of butter. Dip each slice of bread into the egg mixture, ensuring both sides are coated.

Prepare the Bananas
Slice the bananas lengthwise and set aside.

Toast the Walnuts
In a separate pan, toast the walnuts over medium heat for 3-4 minutes or until fragrant.

In a skillet over low heat, add the sliced bananas and cajeta caramel. Cook for 2-3 minutes until the bananas are heated through and slightly caramelized.
Assembly

Place two slices of French toast on each plate.
