    Prepare the Potatoes

    Wash the small potatoes thoroughly and place them in a pot. Cover with water, add salt, and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and let them cool slightly.

    Prepare the Cheese

    While the potatoes are cooking, slice the Raclette cheese into thick slices, about 1/4 inch thick.

    Heat the Cheese

    If using a Raclette grill, preheat it according to the manufacturer's instructions. If not, you can use a broiler. Place the cheese slices in the designated holders or on a baking sheet.

    Melt the Cheese

    Melt the cheese under the broiler or grill until it is bubbly and slightly browned, about 5-7 minutes.

    Serve

    Serve the melted Raclette cheese over the warm confit potatoes. Garnish with minced garlic and fresh herbs. Accompany with cornichons and pickled onions on the side.
