    Cook the Pasta

    Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

    Make the Cheese Sauce

    In a cast-iron skillet, melt the butter over medium heat. Once melted, whisk in the flour, stirring constantly for about 2 minutes until it forms a roux. Gradually whisk in the milk, and continue to stir until the mixture thickens, about 5-7 minutes.

    Add the Cheese

    Remove the skillet from heat and stir in the cheddar cheese and mozzarella cheese until melted and creamy. Season with salt, black pepper, and paprika.

    Combine Pasta and Sauce

    Add the cooked macaroni to the cheese sauce and stir until fully coated.

    Prepare for Baking

    Preheat your oven to 350°F (175°C). If desired, sprinkle the bread crumbs on top of the mac and cheese for a crunchy topping.

    Bake

    Transfer the skillet to the preheated oven and bake for 20 minutes, or until the top is golden brown.

    Garnish and Serve

    Remove from the oven, sprinkle with chopped parsley, and let it sit for 5 minutes before serving.
