Grilled Cheese

Rub the inside of a fondue pot with the cut garlic clove. Discard the garlic.

Prepare the Pot

In a mixing bowl, combine the grated Gruyère and Emmental cheeses with cornstarch. Stir in white wine and heat in the fondue pot over medium heat until melted, stirring constantly.

Melt the Cheese

Once the cheese is melted, add the Kirsch, nutmeg, and black pepper. Stir well to combine.

Add Flavor

Serve immediately with bread cubes and assorted dippers like vegetables, apples, or cured meats. Use fondue forks or skewers to dip.

In a large bowl, combine the ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, black pepper, and shredded cheddar cheese. Mix until well combined.

Mix the Ingredients

Using your hands, form the mixture into small bite-sized balls, about 1 inch in diameter.

Form the Bites

In a large skillet, heat the cooking oil over medium heat.

Heat the Oil

Add the formed bites to the skillet in batches, ensuring not to overcrowd the pan. Cook for about 4-5 minutes on each side or until golden brown and cooked through.

Cook the Bites

Remove bites from the skillet and drain on paper towels. Serve warm.

Bring a large pot of salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Cook the Pasta

In a cast-iron skillet, melt the butter over medium heat. Once melted, whisk in the flour, stirring constantly for about 2 minutes until it forms a roux. Gradually whisk in the milk, and continue to stir until the mixture thickens, about 5-7 minutes.

Make the Cheese Sauce

Remove the skillet from heat and stir in the cheddar cheese and mozzarella cheese until melted and creamy. Season with salt, black pepper, and paprika.

Add the Cheese

Add the cooked macaroni to the cheese sauce and stir until fully coated.

Combine Pasta and Sauce

Preheat your oven to 350°F (175°C). If desired, sprinkle the bread crumbs on top of the mac and cheese for a crunchy topping.

Prepare for Baking

Transfer the skillet to the preheated oven and bake for 20 minutes, or until the top is golden brown.

Bake

Remove from the oven, sprinkle with chopped parsley, and let it sit for 5 minutes before serving.

Wash the small potatoes thoroughly and place them in a pot. Cover with water, add salt, and bring to a boil. Cook until fork-tender, about 15-20 minutes. Drain and let them cool slightly.

Prepare the Potatoes

While the potatoes are cooking, slice the Raclette cheese into thick slices, about 1/4 inch thick.

Prepare the Cheese

If using a Raclette grill, preheat it according to the manufacturer's instructions. If not, you can use a broiler. Place the cheese slices in the designated holders or on a baking sheet.

Heat the Cheese

Melt the cheese under the broiler or grill until it is bubbly and slightly browned, about 5-7 minutes.

Serve the melted Raclette cheese over the warm confit potatoes. Garnish with minced garlic and fresh herbs. Accompany with cornichons and pickled onions on the side.

Spread butter evenly on one side of each slice of bread.

Prepare the Bread

Place one slice of bread, butter-side down, in a skillet over medium heat. Layer with cheddar cheese and top with another slice of bread, butter-side up.

Assemble the Sandwich

Cook for 3-4 minutes or until golden brown. Carefully flip the sandwich and grill the other side for another 3-4 minutes until the cheese is melted and the bread is golden and crispy.
