Preparation Steps

  1. 1

    Prepare Potatoes

Preheat your oven to 400°F (200°C). Wash the potatoes thoroughly and dry them. Rub the skins with olive oil and sprinkle with salt.

  2. 2

    Bake Potatoes

Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until they are tender when pierced with a fork.

  3. 3

    Cook Bacon

While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and let it cool, then crumble it into small pieces.

  4. 4

    Prepare Broccoli

Steam the broccoli florets until tender, about 3-4 minutes. Chop into small pieces.

  5. 5

    Assemble Potato Skins

Once the potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer of potato on the skin.

  6. 6

    Fill Potato Skins

In a bowl, mix the crumbled bacon, steamed broccoli, and half of the cheddar cheese. Fill each potato skin with this mixture, top with remaining cheese.

  7. 7

    Final Bake

Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

  8. 8

    Serve

Remove from the oven, garnish with chopped green onions, and serve with sour cream on the side.
