    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Scrub the russet potatoes clean and pierce them a few times with a fork. Rub the potatoes with olive oil and sprinkle with salt.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for about 45-60 minutes, or until tender. Remove from the oven and let cool slightly.

    Cook the Bacon

    While the potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon into small pieces.

    Prepare the Potato Skins

    Once the potatoes are cool enough to handle, cut them in half lengthwise. Scoop out some of the flesh, leaving about 1/4 inch of potato around the skin. Brush the insides with olive oil and season with salt and pepper.

    Fill the Skins

    Place the potato halves cut side up on a baking sheet. Sprinkle the crumbled bacon and shredded cheddar cheese into each potato skin.

    Bake Again

    Return the filled potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and top with sour cream and chopped green onions. Serve warm.
