Prepare the Onions
Peel the onions and slice them into 1/2-inch thick rings. Separate the rings and set aside.

Make the Batter
In a mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. In another bowl, whisk together the buttermilk and eggs. Gradually add the wet ingredients to the dry ingredients, mixing until well combined.

Coat the Onion Rings
Dip each onion ring into the batter, allowing excess to drip off. Then, coat the battered rings in breadcrumbs, pressing gently to adhere.

Heat the Oil
In a large deep pot or fryer, heat the vegetable oil to 350°F (175°C).

Fry the Onion Rings
Carefully add the coated onion rings to the hot oil in batches, frying until golden brown, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
