Prepare the Shrimp
In a medium bowl, season the shrimp with salt, black pepper, and cayenne pepper. Set aside.

Set Up Breading Station
In three separate shallow bowls, place flour in the first bowl, beaten eggs in the second, and a mixture of shredded coconut and panko breadcrumbs in the third.

Bread the Shrimp
Dredge each shrimp in the flour, shaking off the excess. Dip into the egg, allowing any excess to drip off, then coat with the coconut-panko mixture, pressing gently to adhere.

Heat the Oil
In a large skillet, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Shrimp
Working in batches, add the breaded shrimp to the skillet and fry for 2-3 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

Serve the coconut shrimp hot with lime wedges on the side for squeezing.
