Preparing the Ravioli

Make the Dough
In a large mixing bowl, combine the flour and salt. Make a well in the center, add the eggs and olive oil. Mix until a dough forms. Knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Roll Out the Dough
Divide the dough into quarters. Roll out each quarter into thin sheets using a pasta machine or rolling pin, about 1/16 inch thick.

Assemble the Ravioli
Place a teaspoon of filling on the sheet, leaving space between each. Moisten the edges with water, fold the dough over, and press to seal the edges. Cut into squares or circles.

Cook the Ravioli
Bring a large pot of salted water to a boil. Carefully drop the ravioli in and cook for 4-5 minutes or until they float to the surface. Remove with a slotted spoon.
