Cooking Instructions

  1. 1

    Sear the Chicken

In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken thighs and sear until golden brown on both sides, about 4-5 minutes per side. Remove chicken and set aside.

  2. 2

    Sauté Vegetables

In the same skillet, add the chopped onion and bell peppers. Sauté until softened, about 5 minutes. Add the minced garlic and cook for an additional minute.

  3. 3

    Add Liquids and Seasoning

Pour in the diced tomatoes (with juices), chicken broth, and red wine. Stir in the Italian seasoning, salt, and black pepper.

  4. 4

    Combine and Simmer

Return the seared chicken to the skillet. Bring the mixture to a boil, then reduce heat to low, cover, and let simmer for 30-40 minutes, or until chicken is cooked through and tender.

  5. 5

    Finish with Fresh Herbs

Once cooked, stir in the chopped fresh basil. Adjust seasoning if necessary and serve hot.
