Prepare the Broth
In a medium saucepan, bring the vegetable broth to a simmer over medium heat. Keep it warm but not boiling as you prepare the risotto.

Sauté the Aromatics
In a large skillet or saucepan, heat the olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Toast the Rice
Add the Arborio rice to the skillet and stir to coat it with the oil and aromatics. Cook for about 2 minutes until the rice becomes slightly translucent.

Deglaze with Wine
Pour in the white wine and stir continuously until it is mostly absorbed by the rice.

Add Broth Gradually
Begin adding the warmed vegetable broth one ladle at a time, stirring often. Wait until the liquid is mostly absorbed before adding the next ladle. Continue this process for about 18-20 minutes until the rice is al dente and creamy.

Season and Serve
Remove the risotto from heat and stir in the grated Parmesan cheese (or nutritional yeast). Season with salt and black pepper to taste. Serve hot, garnished with fresh parsley.
