Method

Caprese Over Arugula

    Prepare the Ingredients

    Slice the fresh mozzarella and ripe tomatoes into thick slices.

    Assemble the Salad

    On a large plate, layer arugula, followed by slices of mozzarella and tomatoes. Tuck fresh basil leaves between the layers.

    Dress the Salad

    Drizzle with extra virgin olive oil and balsamic glaze. Sprinkle with salt and black pepper to taste.

Rack of Lamb

    Preheat the Oven

    Preheat your oven to 400°F (200°C).

    Prepare the Marinade

    In a small bowl, combine minced garlic, chopped rosemary, salt, black pepper, and olive oil.

    Marinate the Lamb

    Rub the marinade all over the rack of lamb and let it sit for at least 30 minutes at room temperature.

    Roast the Lamb

    Place the marinated lamb in a roasting pan and roast in the preheated oven for 25-30 minutes for medium-rare, or until desired doneness.

    Rest and Serve

    Let the lamb rest for 10 minutes before slicing and serving.

Petite Filet Topped with Jumbo Lump Crab

    Season the Filets

    Season the petite filets with salt and black pepper on both sides.

    Sear the Filets

    In a skillet over medium-high heat, melt 2 tablespoons of butter and sear the filets for 4-5 minutes on each side for medium-rare.

    In a small bowl, mix jumbo lump crab meat with lemon juice, chopped parsley, and a pinch of salt.

    Top the Filets

    Remove the filets from the skillet, place on plates, and top each with the crab mixture. Melt the remaining butter and drizzle over the filets.

Pecan Macadamia Pie

    Preheat the Oven

    Preheat your oven to 350°F (175°C).

    In a mixing bowl, combine pecans, macadamia nuts, brown sugar, corn syrup, eggs, vanilla extract, and a pinch of salt. Mix until well combined.

    Fill the Pie Crust

    Pour the filling mixture into the prepared pie crust, spreading evenly.

    Bake the Pie

    Bake in the preheated oven for 45-50 minutes or until the filling is set and the top is golden brown.
