Lobster Bisque

Method

Lobster Bisque

    Prepare the Lobster

    Boil the lobsters in salted water for 10-12 minutes until cooked. Remove from water and let cool, then extract the meat and chop into pieces.

    Sauté the Vegetables

    In a large pot, melt butter over medium heat. Add onion, celery, carrot, and garlic. Sauté until softened, about 5-7 minutes.

    Make the Bisque Base

    Stir in the tomato paste, then add the chicken stock. Bring to a simmer and cook for 20 minutes.

    Blend the Bisque

    Use an immersion blender or transfer to a blender to puree until smooth. Return to heat.

    Add Cream and Seasoning

    Stir in the heavy cream, salt, pepper, thyme, and sherry wine. Add the lobster meat and heat through before serving.

Caesar Salad

    Prepare the Lettuce

    Wash the romaine lettuce thoroughly, chop it into bite-sized pieces, and place in a large salad bowl.

    Add croutons and grated Parmesan cheese to the lettuce. Drizzle Caesar dressing on top and toss until well combined.

House Salad

    Prepare the Greens

    In a large salad bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion.

    In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.

    Drizzle dressing over the salad and toss to coat evenly.

Petite Filet Mignon & Shrimp

    Season the filet mignon and shrimp with salt and black pepper.

    Sear the Filet

    In a skillet, heat olive oil over medium-high heat. Sear the filet mignon for 4-5 minutes on each side for medium rare.

    Cook the Shrimp

    In the same skillet, add minced garlic and shrimp. Cook for 3-4 minutes until shrimp are pink and opaque.

Chicken Marsala

    Pound the Chicken

    Pound chicken breasts to even thickness and season with salt and pepper.

    Dredge in Flour

    Coat the chicken in flour, shaking off the excess.

    Cook the Chicken

    In a skillet, heat olive oil over medium heat. Cook chicken for 5-6 minutes on each side until golden brown.

    Add mushrooms to the skillet and cook for 3 minutes. Pour in Marsala wine and chicken stock, simmer for 5-7 minutes.

Chef's Vegetarian Pasta

    Boil pasta according to package instructions until al dente. Drain and set aside.
