Preparation of Tiramisu

    Prepare the Espresso

    Brew 1 cup of strong espresso and allow it to cool. If desired, mix in coffee liqueur for added flavor.

    Prepare the Egg Mixture

    In a large mixing bowl, whisk together 4 egg yolks and 1 cup of granulated sugar until the mixture is thick and pale. This should take about 5 minutes.

    Add Mascarpone

    Add 16 oz of mascarpone cheese to the egg yolk mixture and gently fold until well combined, ensuring there are no lumps.

    Whip the Cream

    In a separate bowl, whip 1 cup of heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully incorporated.

    Dip Ladyfingers

    Quickly dip each ladyfinger (24 pieces) into the cooled espresso mixture, making sure not to soak them. Lay them in a single layer at the bottom of a serving dish.

    Layer the Mascarpone Mixture

    Spread half of the mascarpone mixture over the layer of dipped ladyfingers.

    Repeat Layers

    Create another layer with the remaining dipped ladyfingers followed by the rest of the mascarpone mixture.

    Chill

    Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

    Serve

    Before serving, dust the top with cocoa powder (2 tbsp) using a fine sieve for an elegant finish.
