Sauté the Spinach
In a large skillet over medium heat, add the fresh spinach. Cook until wilted, about 3-5 minutes. Remove from heat and let cool.

Prepare the Cheese Mixture
In a mixing bowl, combine the wilted spinach, goat cheese, cream cheese, minced garlic (minced), salt, black pepper, and nutmeg. Mix until well combined and set aside.

Prepare the Phyllo Dough
Thaw the phyllo dough according to package instructions. Preheat your oven to 375°F (190°C).

Butter the Dough
Melt the unsalted butter in a small saucepan. Lay out one sheet of phyllo dough on a clean surface and brush with melted butter. Layer another sheet on top and brush with more butter. Repeat until you have 3-4 layers.

Cut the layered phyllo dough into strips about 3 inches wide. Place a tablespoon of the spinach and cheese filling at one end of each strip. Fold the dough over to create a triangle shape, and continue folding the triangle along the strip until you reach the end. Brush the finished triangle with more melted butter.
