Method

Preparation

  1. 1

    Marinate the Tuna

In a bowl, combine the soy sauce, sesame oil, grated ginger, and minced garlic. Whisk together until well mixed. Place the ahi tuna steaks in a shallow dish and pour the marinade over them, turning to coat evenly. Cover and refrigerate for at least 30 minutes.

  2. 2

    Prepare the Seed Mixture

In a small bowl, mix together the black sesame seeds and white sesame seeds. Set aside.

Cooking

  1. 3

    Heat the Pan

In a large skillet, heat the olive oil over medium-high heat until shimmering.

  2. 4

    Coat the Tuna Steaks

Remove the marinated tuna steaks from the refrigerator and let them come to room temperature for about 10 minutes. Sprinkle both sides of the steaks with salt and black pepper, then press them into the seed mixture until evenly coated.

  3. 5

    Sear the Tuna

Once the oil is hot, carefully place the tuna steaks in the skillet. Sear for about 1-2 minutes on each side for rare (internal temperature of 120°F), or longer if desired. Remove from the pan and let rest for a minute.

Serving

  1. 6

    Slice and Serve

Slice the seared tuna steaks against the grain into thin slices. Arrange on a plate, garnish with sliced green onions, and serve with lemon wedges on the side.
