Preparing the Lamb

Marinate the Lamb
In a bowl, combine olive oil, minced garlic, chopped rosemary, salt, and pepper. Rub this mixture all over the lamb shoulder. Cover and let it marinate for at least 1 hour in the refrigerator, or overnight for best results.

Roast the Lamb
Preheat your oven to 375°F (190°C). Place the marinated lamb in a roasting pan and roast for about 1.5 to 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare. Let it rest for 15 minutes before slicing.
Making the Mint Jelly

Prepare the Mint
In a saucepan, combine water, sugar, and white vinegar. Bring to a boil over medium heat, stirring until the sugar is dissolved. Add the fresh mint leaves and let it simmer for about 10 minutes.

Strain the Mixture
Remove the saucepan from heat and strain the mixture through a fine mesh sieve to remove the mint leaves. Return the liquid to the saucepan.

Add Pectin
Add the pectin to the strained liquid. Return to a boil and cook for 1-2 minutes, stirring constantly until the mixture thickens slightly. Remove from heat.

Pour the mint jelly into sterilized jars and let it cool to room temperature. Seal and refrigerate. The jelly will thicken as it cools.
